Even so, have you considered having power of attorney for each other, in case of hospitalization, etc. Also, it's great that you two have found each other, and both of you have the adventuresome spirit, as well as the discipline of budgeting, to achieve your goals together. I have a friend that have moved to France and another to Ireland with their families, and they both said they wished they had done more paperwork at consulates in the US before they moved. Sounds like your visa will last longer in Spain if you apply there, but it might be easier to get if you apply at a consulate in the US. My friend that moved to Ireland really wishes they had gotten international driver’s licenses before moving.

There's not a ton we can do at the local consulate here other than the NIE and actual visa. As for the latter, the process doesn't appear nearly as straightforward as going to Spain to apply for several reasons.
The drivers license sounds like quite a process in Spain. And it must be done there. I'm not getting one, but Melisse plans to.
